I love this recipe for the days when you’re needing a quick dinner, that’s warming and healing but you don’t have any meat thawed. Either grab a roast chook from your local grocery store, or if you have some left over chicken in the fridge, you can whip this dinner together in 30 min.
How is this recipe gut healing?
This recipe is packed with bone broth and turmeric, and here’s why that’s a good thing!
Bone broth contains amino acids, which are helpful for digestion. In particular, the amino acid glutamine has been shown to help heal the intestinal barrier which is so crucial, especially if you have issues with leaky gut and IBS. If you haven’t been already, you need bone broth in your life!
Turmeric is anti-inflammatory so will help to reduce inflammation in your gut lining and bowel. Not to mention it’s also a potent antioxidant!
I lived off chicken curry during the first year of resetting my gut, even sitting at my desk at work eating this for morning tea! And it made such a difference! Back then I think I omitted the broccoli and cauliflower and had green beans instead and also left out the garlic. So if you’re sensitive to anything listed, please have fun experimenting and putting whatever veggies you have on hand and seeing what you like best! Personally though, I think this combination is delicious.
For this recipe, I have used Nutra Organics Bone Broth Powder because it’s convenient and tastes great and I didn’t have any home made broth on hand. But you can definitely use your own broth instead.

What you will need to make gut healing chicken curry

Ingredients
- Meat from one roast chicken, pulled into chunks
- 1 tbspn coconut oil
- 1 onion
- 2 small sticks of celery
- 1 tsp minced garlic
- 1/2 tsp salt
- Black pepper to taste
- 1 tsp turmeric
- 2 tsp curry powder
- 400ml hot water (or 400 ml bone broth and omit bone broth powder
- 2 tbspn Nutra Organics Bone Broth Powder
- 1 can coconut cream
- 1 zucchini
- 1/2 head broccoli
- 1/2 head cauliflower
- 2 bunch bok choi
Method
In a pot or fry pan, melt 1 tablespoon of coconut oil and brown celery and onion.
Next, add garlic paste, broth, chicken, veggies and coconut cream.
Because I had just cooked my perfect roast chicken recipe, I had a lovely pan of juices and I just added that to the broth mixture and reduced the water amount.



Next add your spices and salt and pepper. Don’t forget to use freshly ground black pepper to bring out the anti-inflammatory benefits of the turmeric.


Cook on a low heat until veggies are cooked through. Try not to boil as this can curdle the coconut cream.

Lastly add the roughly chopped bok choi and let wilt before serving.
Serve over rice, with flat bread, or just on it’s own and enjoy!

- 1 can coconut cream
- 1 tsp salt

- 2 tsp curry powder
- 1 tsp tumeric
- 1 zucchini
- 1/2 head broccoli
- 1/2 head cauliflower
- 2 bunch bok choi
Instructions

3. Add spices and salt and pepper.

Serve with rice, or flat bread or just eat by itself. Enjoy!
