These simple and crispy sourdough crackers are a real hit! Super crispy, and super delicious. Full of nutrition and easy to digest.
These crackers are perfectly imperfect and have that lovely rustic quality that makes things feel all the more special. They taste buttery and cheesy and yet are purely made from starter and a little oil!
Add any number of possible combinations of flavourings from cheese, seeds, herbs or garlic powder to make even more exciting.
What you will need
All you need for this recipe is:
- baking tray
- grease proof paper
- sourdough starter (either straight from fridge or fed, wont matter)
- olive oil
- salt
- Optional: any additional flavours you want to add, ie herbs
How to make simple and crispy sourdough crackers
Line a baking tray with grease proof paper and scoop on your starter. The starter can be active or straight from the fridge, it will not matter. I have used 1 cup of starter here, but you can use more or less depending on how big your tray is. The idea is to just have enough to thinly spread the starter over the pan.
Spread the starter out. You don’t want it to be so thin that you can see through it, but you do want it as evenly spread as possible to prevent the outside burning before middle is cooked. Thicker will be more of a solid biscuit and thinner will be more like a crispy chip. So make them however you prefer.
Drizzle with olive oil and then with the spatula, gently spread the oil evenly over the starter.
Sprinkle with salt and whatever flavourings you would like! Just plain is super delicious! But if wanting to change it up a bit, I’m sure herbs or cheese or garlic powder would be amazing also! You could totally turn these into your very own healthy Shapes!
Next, pop into a preheated oven at 160 degrees C (320 degrees F). My oven cooks hot so I have it on a lower temp.
Cook for approx. 20-25 min. This will depend on how thinly you spread your starter and also how crispy you like them! Just keep an eye on them and when it’s starting to show a lovely brown colour you know they’re ready.
Lastly remove from the oven and immediately chop or brake in to pieces. They don’t tend to brake or cut very evenly, but I think this adds to the nice rustic home made feel and they looks really lovely on a grazing platter!
Don’t waste the crumbs! These are AMAZING used as croutons and sprinkled on a salad or over a soup! I would almost just make these for those little chips or gold alone!
