How to reduce veggie food waste with this recipe?
This nutritious recipe is one of my favourite ways to make the most of any veggies you might have in your fridge or garden that are needing to be used up. The basic flavours of this meal are the meat, onion, capsicums and spices. After that, any variation or combination of vegetables can be used to make the most of what you have on hand and what is getting to the end of it’s life. Make this dish seasonal by using cauliflower, broccoli, and peas in the cooler months, and zucchini, beans, carrots and corn in the warmer. Or just whatever you have in your fridge and freezer! In this version I’ve added chickpeas for their soluble fibre benefits, but beans could be added to transform this recipe into a taco mince.
There are so many delicious variations to serve this recipe!
My homes favourite is simply with rice and toped with some freshly grated cheese. But other options could be: Nachos, pita bread, toasted sandwiches, meat pies, quinoa, pasta, lettuce cups, your imagination is the limit!

All the healthy ingredients you’ll need.
- 1 kg mince
- Splash of oil (olive or coconut are my choice)
- Salt and pepper to taste
- 2 tsp paprika
- 2 tsp curry powder
- 1/2 can organic chickpeas (can use more)
- 1 cup water
- 3 tsp Nutra Organics chicken Bone Broth powder
- 2 onions
- 2 capsicums
- 2 sticks celery
- 2 carrots
- 2 zucchinis
- Half head of broccoli
- Half head of cauliflower
- 2 bunch bok choi
How to cook delicious and healthy savoury mince.
Brown mince on high heat in oil with salt, pepper, paprika and curry power. Add onion and continue to cook on a high heat till onion has wilt. Mince may stick slightly as the water reduces out and this is a good thing as adds nice colour and flavour. Then add the chickpeas, water and broth powder (if you have fresh broth on hand, than just use that and omit water.)
Chop the veggies! I prefer to grate the carrots and zucchini. Add the veggies (except for the bok choi or any other leafy greens you’re using) and allow them to cook down on a reduced heat.
Once veggies are mostly cooked through, add the bok choi and give it a few minutes to wilt.
And you’re ready to serve!

Have just made up this yummy savoury mince with pork mince and added mushrooms and garlic and a tin of four beans instead of just chickpeas. 😋
