I love the combination of zucchini and eggs and with this recipe you’ll have a great grab and go breakfast full off protein and fibre to start the day off right.
I’ve been recently doing some renovations in our kitchen and so needed a way to have some healthy breakfast that didn’t require using our stove and the grab and go breakfast muffins were born! I personally try to avoid bacon, but it’s nice to have something to go with the egg and that’s were I think zucchini is a perfect partner! I was able to make these before pulling my kitchen apart and have them in my fridge to pop in the microwave during the time my kitchen was in shambles.

Ingredients
- 6 eggs
- 1 small zucchini or half of a large one
- Salt and pepper
- Butter to grease tins
How to make grab and go breakfast muffins
Firstly, grease 6 muffins tins with butter. Then grate your zucchini and pack into the bottom of the muffins tins evenly over the 6.

Cook in a moderate oven till the zucchini is mostly cooked.
Next top each muffin with an egg and season with salt and pepper.

Bake in the oven till whites don’t jiggle when you shake the tray.
